Simply Delicious Pot Roast

Pot roast is one of my favorite dinners. Here are three reasons why. First, I love eating a giant slab of meat with creamy potatoes and gravy. I guess I am a carnivore. Another reason is that pot roast and potatoes is full of hearty flavors which are built over time as the roast slowly cooks. Finally, the beefy taste is calming and soothing comfort food which somehow satisfies some inner need. It warms your heart from the outside. Sound corny? Sorry, but I think it is hard to beat good old-fashioned meat and potatoes.

Pot Roast with Potatoes, Carrots and Corn

A pot roast is a pretty simple item to cook though it can seem intimidating at first. You might have visions of your grandma in the kitchen all day cooking a pot roast when, in fact, pot roast is more about doing a little a prep work then cooking low and slow. First, brown or sear the outside of the roast then place it a slow cooker with some potatoes, beef stock and a few other items  and when you get home from work dinner will be ready! Most if all as a bonus your house will be filled that delicious smell of roasting meat.

Simply Delicious Pot Roast Recipe

Ingredients

2-3 lb Beef Boneless Chuck Roast

1.5 lbs Petite Potatoes

8 oz. Baby Carrots (half of small bag)

1 large Sweet Onion

8 oz. Mushrooms

1 quart Beef Stock

1 cup of a Dry Red Wine

Extra Virgin Olive Oil

Salt and Pepper to taste

Instructions

  1. Heat up a cast iron skillet on medium heat
  2. Add some Extra Virgin Olive Oil and brown roast on each side
  3. Add salt and pepper to taste to each side while browning

  4. Put potatoes in slow cooker
  5. Put carrots in slow cooker
  6. Place browned roast in slow cooker on top of potatoes and carrots
  7. Dice onion and mushrooms
  8. Saute onion and mushrooms until they begin to soften in same skillet used for roast

  9. Add red wine to skillet and scrape bottom of skillet to deglaze
  10. Pour wine onions and mushrooms on top of roast in slow cooker

  11. Add  beef stock (liquid should come about half way up roast)
  12. Cover with lid and cook on low for 8 eight until the roast is tender and falling apart
  13. Don’t forget to plug in slow cooker and turn on low!
  14. Plate the Pot Roast with Potatoes and Carrots and Corn prepared separately
