How To Make a Breakfast Sandwich Crammed with Big Flavor

Here is a great breakfast sandwich to start your day off right!

Breakfast literally means to break the mini fast that you have been on overnight while you were sleeping. This protein packed , crunchy cheesy scrambled egg on an English muffin sandwich is a great way to “break the fast”, wake up your taste buds and power you through your morning.

When you bite into this Breakfast Sandwich there is the crunch of toasted English muffin, the coolness of the mayo, spiciness of the sriracha, the creaminess of the egg and the fun to eat string factor from the melted cheese.  Condiments are important and this recipe demonstrates this idea. Without the spicy mayo it’s a good Breakfast Sandwich consisting of English muffin, cheese and melted cheese. With the mayo it is a great sandwich. The spicy mayo takes this sandwich to a higher level.

There is a debate at our house on the number of eggs. My wife Pam prefers one egg instead of two insisting that the egg to muffin ratio is better with only one egg. I prefer two eggs to get the extra protein and I think it keeps the egg a little more dominant. It is the star of the show isn’t it? Isn’t the English muffin there just to support the egg? The debate continues here.

Breakfast Sandwich with Egg, Cheddar Cheese and Spicy Mayo Recipe

Ingredients:

1-2 large Eggs

English Muffin

small slice of Cheddar Cheese

1 Tbsp Light Mayonnaise

1 Tbsp Sriracha (more or less to taste)

Tip: Slightly under cook the egg in thick ceramic bowl to prevent the egg from tasting rubbery

Instructions:

Here is the quick way to make this in about 5 minutes:

  1. Split open and English muffin with your fingers and put it in toaster

  2. Crack two large eggs into a microwave safe bowl and add a splash of water
  3. Whisk the eggs with a fork until uniformly mixed
  4. Microwave eggs until setup and creamy
  5. Find the Cheddar Cheese in your fridge while everything is cooking
  6. Add mayo and sriracha in small bowl and whisk with a fork until combined

  7. Remove eggs from microwave at appropriate time and add cheese.
  8. Fold over eggs in bowl so cheese is covered by hot eggs and it will begin to melt.
  9. Slather the mayo and sriracha mixture on each half of the English muffin after in pops from the toaster
  10. Fold eggs in again, remove from the bowl and place on the English muffin bottom and add the top of the muffin
  11. Hold on with both hands and take a big bite!
