Farmers Market Sweet Corn

I decided to write a mini series on summer vegetables from my garden or local Farmers Market so this post is all about another of my favorite vegetables … Sweet Corn. I love the bi-color sweet corn from Shipula Farms from the Howland Farmers Market. It is sweet, crunchy and consistently delicious.

When to Plant Sweet Corn

I have no idea. I rely on the professionals here. There is a saying that corn should be knee high by the Fourth of July.

When to Pick Sweet Corn

Choose ears which are plump and have the largest diameter at the base. This means the kernels are the most developed.

How to Clean Sweet Corn

Simply start to peel away the husk at the top of the ear and keep working around until all the layers are removed. Rub your hand across the cob to remove the strands of silk. You might even need to give a rub with a small kitchen brush to remove all the silk.

How to Boil Sweet Corn

Put your corn in a large pot and cover with plenty of water. Add 1/2 cup of sugar and bring to boil for 15 minutes. The corn kernels will be tender but still have a little crunch.

How to Eat Sweet Corn

My favorite is simply with a pat of butter. Enjoy!

How to Freeze Sweet Corn

Hold the cooked ear vertical by the small end with the base of the ear in the center of a large bowl and cut the kernels off the cob with a sharp knife. The bowl will catch the juice and flying kernels as the knife frees the kernels from the cob. Then just put the kernels in a plastic food storage bag. Let them cool down to room temperature then put them in the freezer.
