Bacon Fried Corn

Bacon Fried Corn is old recipe which uses a new way to cook corn to make it an instant favorite. Everyone loves eating corn on or off the cob with butter as I talked about in an earlier post. In this recipe you cut the corn off the cob and cook the corn in the bacon drippings. Easy, delicious and ready in about 10 minutes. Bacon Fried Corn is a great side for with burgers or alone as a simple dinner and the leftovers, if there are any, will be fought over.

Pam saw the inspiration for this recipe in the Warren Tribune in an an article by Lovina Eicher and said  immediately “You should cook this at the Farmers Market”. I have been doing cooking demonstrations at the Warren Farmers Market to show how the food sold there can be cooked and what it tastes like. This summer I have cooked Beef Sliders, Pasta with Simple Red Sauce and now Bacon Fried Corn! I liked this recipe for a cooking demo because you can buy all the ingredients at the Market and it is easy to cook on the simple setup that they have there.  Everyone at the Market loved the Bacon Fried Corn and many said they were going to cook it for dinner that night! Instant hit!

This recipe is simple and delicious as is but also can be changed up a bit too. For example, I think it would be great with some green bell peppers. Also, I made a batch of Bacon Fried Corn with some Mo’s Private Reserve dry rub spice and it was even more delicious. The spice added some sweetness and and some mild heat which intensified the flavors of the corn and bacon.

Ingredients for Bacon Fried Corn

Adapted from recipe for Fried Corn by Lovina Eicher

3 ears of Sweet Corn

3 strips of Bacon

1 small Onion

Salt and Pepper

 

Instructions for Bacon Fried Corn

  1. Place strips of bacon in skillet and cook on low
  2. Chop onion
  3. Cut corn kernels from the cob
  4. Remove bacon when crisp and drain on paper towels
  5. Add onion to bacon drippings and cook for one minute
  6. Add corn to skillet and continue cooking for about 10 minutes until corn is tender
  7. Finely slice bacon strips and sprinkle on top of corn
  8. Enjoy!
